Before 1881, Native Americans lived in the area now known as Defuniak Springs. The Florida State Legislature authorized a survey party from the Pensacola and Atlantic Railroad to look over the area.

Once they arrived, they found a wide-open space surrounding a clear lake. They set up camp there. Colonel Chipley saw the uniquely round lake and said, “Here a town shall be built.”

He was right. The railroad town eventually became Defuniak Springs.It was named after the president of the Pensacola and Atlantic Railroad.

To this day it remains a small and quiet town with only 7,000 residents.

By coincidence, the land owners met with the leaders of the Chautauqua tribe in New York.  They convinced the Chautauqua to extend to their railroad town. Defuniak Springs became the permanent winter home of the Chautauqua Assembly.

A winery opened for business on the spot in 1990 and has operated since. The now-beloved local landmark is the perfect place to enjoy a tasting. Locals enjoy the winery year-round, basking in mild temperatures perfect for the outdoor seating area.
